Ingredients
- 400-500g lobster meat (1 large or two medium tails usually)
- ½ cup of mayonnaise
- 1 tsp sriracha sauce (or ½ tsp of chilli powder)
- lemon juice from ½ a lemon
- 2 stalks celery, finely chopped
- chives, 2-3 tbsp when finely chopped
- 1 avocado, peeled and sliced for serving
- Salt for seasoning (pepper if you wish)
- If using raw lobster tails, bring large pot of water to boil, adding 3-4 tbsp of salt. Add lobster tails and cook on the boil for approx 12-18 mins depending on the size of the tail. Tails will go a nice red colour when ready.
- Remove the tails from the pot and set aside to cool. Once cool remove the meat from the shell and chop roughly into 1-1½ cm (~½ inch) pieces.
- In a large mixing bowl combine mayo, sriracha, lemon juice, celery and most of the chives (keeping a little of the chives for garnish). Season with a little salt, to taste, and pepper if you like.
- Fold in lobster meat, ensuring all pieces have been sufficiently covered. I usually like to let the mix sit in the fridge for 15-30 mins to let flavours combine a little more.
- Serve with the sliced avocado on a bed of green stuff. Spinach leaves for the look or butterhead lettuce to use as a delivery mechanism.
- From here feel free to serve with crusty bread, like fresh baguette, lightly toasted hot dog buns, melba toast or toasted sourdough slices. And dont be afraid to just dig in.
- It also makes a great “surf” addition to a steak for a slightly different surf & turf dinner.
- If you have a good seafood supplier ask for lobster that has a slightly sweeter meat.
- If using frozen lobster make sure it is properly thawed before cooking.
- DONT use frozen cooked lobster. The meat will usually become very spongy in texture after defrosting.
- You can prepare raw lobster tails the day before and leave covered in the fridge overnight.
- Depending on your taste preference you can swap the lemon for lime or orange juice.
- Add less or more sriracha or chilli, again depending on your preference.
- Chives can be swapped for coriander, parsley or dill. But do use fresh, whatever it is.
