How Long Do You Smoke Beef Short Ribs for Perfectly Tender Meat?
As a backyard barbecue enthusiast, smoking beef short ribs is one of my favorite things to make. When done right smoked short ribs result in incredibly tender fall-off-the-bone meat with a lovely smoky flavor. The key is smoking them low and slow for the right amount of time. In this article, I’ll share everything you need to know about how long to smoke short ribs to get perfect results.
What are Beef Short Ribs?
Before jumping into cook times, let’s briefly go over what short ribs are. Beef short ribs come from the belly primal cut near the animal’s breastbone. They consist of sections of ribs with meat between the bones. Short ribs have great marbling and robust beefy flavor.
There are two main types of short ribs you’ll encounter
-
Plate Short Ribs: These ribs have meat on top of the bones and are cut flat like pork spare ribs. This is the most common type you’ll find.
-
Flanken or English Style Short Ribs: These are cut across the bones into smaller 2-3 inch sections. They’re easy to find at grocery stores.
For smoking, I recommend using the plate style if you can get them from a butcher. The flanken cut works too though. Look for ribs with nice marbling for the most flavor and tenderness after the low, slow smoke.
Why Smoke Short Ribs Low and Slow?
Now let’s get into why you want to smoke beef short ribs low and slow. These ribs have a good amount of collagen and fat marbled throughout. Smoking low and slow (at around 225-250°F) allows time for:
-
The fat to render: Long smoke times let the fat melt slowly so the meat gets tender and juicy.
-
Collagen to break down The low heat makes the tough collagen transform into gelatin making the ribs succulent.
-
Deep smoke flavor: Several hours in thin smoke fully permeates the meat.
-
Bark formation: A flavorful, crispy bark develops on the exterior.
So low, slow smoking helps short ribs become incredibly tender while developing deep smoky taste. But exactly how many hours do you need to smoke them?
How Many Hours to Smoke Beef Short Ribs?
The total smoking time for short ribs depends on a few factors:
-
Weight/size of the ribs
-
Temperature of the smoker
-
Thickness of the meat
-
Whether you wrap them while smoking
Taking these elements into account, a general guideline for smoking times is:
- At 225°F – Allow 1.5-2 hours per pound
- At 250°F – Allow 1-1.5 hours per pound
So if you’re smoking 3 pounds of short ribs at 225°F, plan on around 4.5-6 hours total time. For 4 pounds smoked at 250°F, estimate 4-6 hours.
I recommend smoking longer rather than shorter if unsure. It’s better for the collagen to break down completely. Short ribs are done when an instant read thermometer inserted into the thickest part reaches 200-205°F. At this point, the meat should be fall-apart tender when poked with a fork.
Tips for the Best Smoked Short Ribs
Follow these tips for smoking perfect short ribs every time:
-
Trim off any silver skin or excess fat before smoking. Leave nice white fat though.
-
Season generously with a beef rub or use my go-to – salt, pepper, and granulated garlic.
-
Use fruit woods like cherry, apple, or pecan which complement beef.
-
Spritz with a diluted apple juice/apple cider vinegar mix while smoking.
-
Wrap in butcher paper or foil when the ribs stall around 160°F internal temperature. This protects them from drying out.
-
For even more moisture and flavor, add a flavorful liquid like beef broth when foiling.
-
Smoke until probe tender and 205°F internal temp.
-
Let rest for 10-15 minutes before slicing or pulling meat off the bones.
With these tips, your smoked short ribs will turn out incredibly juicy, tender, and full of flavor every time. Smoking these beefy ribs low and slow is so worth the wait!
Troubleshooting Smoked Short Ribs
If your smoked beef short ribs turn out dry or tough, here are some common problems and solutions:
Problem: Ribs are tough and chewy
- Solution: Smoke at lower temp (225°F) and wrap at stall around 160°F. Cook to 205°F internal temp.

- Solution: Use a stronger wood like hickory. Smoke for longer time, at least 1 hour per pound.
Problem: Smoky taste is too strong
